The Kabosu fruit is predominantly grown in the Oita prefecture, where also the Kabosu liqueur from Yatsushika Shuzo is produced. This liqueur has a light green-golden colour and a delicate citrus aroma like a mixture of lemon and lime, however with gentle herb notes reminding of lemon grass. The world of Asian citrus fruits is fascinating, and the kabosu is no exception: it is a relative to the yuzu, looks a little like a lime, and comes with a flavor located somewhere between that of lemons and blood oranges. The Kabosu liqueur tastes exciting and is a must-have for liqueur and citrus lovers.
It is fresh but still very smooth, and with its light acidity you can enjoy it in cocktails or straight. The Japanese like it mixed with soda or (cold or hot) water in a 1:3 ratio.
