Umeshu is a Japanese apricot liqueur with a longstanding tradition. Kaga Umeshu uses the benisashi ume which is only grown in Ishikawa and Fukui prefectures, predominantly in Kanazawa. The name is a combination of “beni”, which means “red”, and “sashi” that stands for “to glow”, and comes from its deep red and bright colour. Benisashi are ume of very high quality (“Nankounai”) that contain more amino acid than other fruit of its kind, which gives them a more gentle aroma and an intense umami flavour. Award winning Manzairaku Kaga Sparkling Umeshu is served on all first class flights with All Nippon Airways (ANA).

Kobori Shuzo is one of the most wellknown sake breweries in Chūbu, Ishikawa prefecture on Honshū island. Founded in the early 18th. century the company is famous for great sake, but also for fantastic umeshu. The whole region is blessed with water of outstanding quality what gives the local spirits an intense and unique flavour. Manzairaku, the award winning umeshu, is produced since 1990.
